Amazingly half of all the white meat from our crabs comes from the purse. This is the honey comb of delicate white shell at the centre of the crab. There are many ways to get to this scrumptious but tricky meat and we are constantly trying to reach the Holy Grail of white meat with texture, no shell, full flavour and realistic cost.
